WC Minutes 12/3/10
 
Present: Shelly, Paula, Justin, Gibson, Elena
 
-Last Week’s Daily Sales Averages: Total: $2,116.49, Store: 1491.60, Cafe: 631.90 (down all around from previous week).  Orders need to be scaled back as sales slow, cafe and store will pay close attention to inventory levels going into winter months.
-Bank Account Totals: Checking: $815.65, Overall: 39,022.88
-We should do a cookbook for 10th Anniversary.
-Thanksgiving recap: Day after was super-slow ($1,400 overall and just $335 in cafe).  Day before was busy for Shelly, lots of work.  Maybe limited hours for day after next year and defiantly extra help the day before.
-We’ll try to keep freezers in basement separated between cafe and store (cafe using larger chest freezer).
-Attendance and attitudes toward WC matters.  If we don’t take it seriously, we’ll have a general manager.  All agree.
-Justin has a guy coming in who’s studying industrial design and will analyze cafe space and basement to help figure out best use of space.
-Tables are supposed to arrive Monday (they did), otherwise we’ll get gangster on them (we didn’t).
-Expansion discussion.  WC would like to see storage and walkin immediately.  Lots of discussion of pros and cons of expanding upstairs.  We’ll make this an ongoing discussion point and try to provide some direction to board in decision-making.
-Some brainstorming of ways to improve cafe sales in short-term.
-Labeling issues were brought up, allergens and dairy ingredients need to be accurate.
-Paula will open Monday through Thursday next week.  Shelly will be in by 9AM.
